WHAT TO DO

Cake:

1. Preheat oven to 350 degrees. Adjust oven rack to middle position.

2. Grease and flour two 9-inch cake pans. Whisk together flour, baking soda, and salt in medium bowl. In a separate bowl, whisk buttermilk, vinegar, vanilla and eggs. In a small bowl, mix cocoa with food coloring until a smooth paste forms.

3. With electric stand mixer on medium-high speed, beat butter and sugar together until fluffy, about 2 minutes, scraping down bowl as necessary. Add one-third of flour mixture and beat on medium-low speed until thoroughly mixed, about 30 seconds. Add half of buttermilk mixture and beat on low speed until combined, about 30 seconds.

4. Alternate flour mixture and buttermilk mixture, ending with flour, scrape down bowl as necessary. Add cocoa mixture and beat on medium speed until completely incorporated, about 30 seconds.

5. Pour batter into prepared pans and bake until a toothpick inserted in center comes out clean, about 25 minutes. Cool cakes in pans 10 minutes then turn out onto a wire rack to cool completely.

6. Place a ring mold over each layer of cake. Remove the ring mold from one layer and set aside. While cake remains in ring mold, spread soft “Chocolate Chip” ice cream on top. Place second cake round on top of ice cream layer. Press down firm, then place ice cream cake in freezer for 4 to 6 hours until frozen solid.

7. Remove frozen cake from freezer.  Press down on cake to remove metal ring mold. Spread cream cheese frosting over entire cake. Garnish with shaved chocolate or chocolate chips.

 

Frosting:

1. With electric stand mixer, beat butter and sugar on medium-high speed until fluffy, about 2 minutes.

2. Add cream cheese, one piece at a time, and beat until incorporated, about 30 seconds. Beat in vanilla and salt. Refrigerate until ready to use.

WHAT YOU NEED TO DO

1. Preheat oven to 350 degrees.

2. Mix brown sugar, butter and cane syrup together and set aside.

3. Add eggs and sugar to a mixing bowl mix well. Add flour, baking powder, salt and pineapple juice to bowl and mix until well combined.

4. Place brown sugar mixture in the bottom of an 8-inch cake pan lined with parchment paper; top with sweet potatoes slices. Pour cake batter evenly over sweet potatoes and place in oven. Bake cake for 35-40 minutes or until toothpick inserted in the center comes out clean. Remove pan from oven and cool for about 15 minutes. Place a serving plate on top of pan and flip cake onto plate. Sprinkle with pecans and serve with vanilla ice cream.

  • 1 c. brown sugar, firmly packed
  • 1 stick unsalted butter, melted
  • 1/3 c. cane syrup
  • 4 lrg. eggs
  • 1 c. granulated sugar
  • 1 ½ c. all-purpose flour

  • ½ tsp. salt
  • ½ c. pineapple juice
  • 3 lrg. sweet potatoes, peeled and thinly sliced
  • ½ c. pecans

WHAT YOU NEED
 
3 sticks unsalted butter, soften
3 cups granulated sugar
5 farm fresh eggs
3 cups Swans cake flour
½ cup 7-Up soda
1 tablespoon pure lemon extract
1-tablespoon pure vanilla extract
2 cups powder sugar
 
WHAT TO DO
Make sure all ingredients are at room temperature. Preheat oven to 350 degrees. Cream butter and sugar together. Add eggs and stir until fully incorporated. Slowly pour in cake flour and mix until smooth, then add cup 7-Up, lemon and vanilla extract and mix well.  Grease and flour bundt pan. Pour mixture in pan and bake at 350 degrees for 1 hour and 15 minutes. Cake is done when toothpick inserted in middle comes out clean. Cool and transfer to a serving plate.

Hummingbird Cake

Ingredients

For the cake

  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons cinnamon
  • 1 ½ teaspoons salt
  • 2 ½ cups chopped bananas
  • 1 ½ cups chopped pecans
  • 1 8-ounce can crushed pineapple, with juice
  • 1 teaspoon vanilla extract

For the icing

  • 1 pound (4 sticks) butter, softened
  • 8 ounces of cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans, toasted

Method

-      For the cake, preheat the oven to 350 degrees.  Butter and flour two 9-inch round cake pans.  Set aside.

-      Whisk together the eggs, sugar and oil in a large mixing bowl.  Sift together the flour, baking powder, cinnamon and salt into a separate bowl, then gently fold into the egg mixture.  Stir in the bananas, pecans, pineapple (with the juice), and vanilla.

-      Divide the batter evenly between the prepared cake pans.  Bake for 30 minutes, or until a knife inserted into the middles of the cakes comes out clean.  Cool cakes in pans until cool enough to transfer to cooling racks.

-      For the icing, cream together the butter and cream cheese with a handheld mixer (or stand mixer with the paddle attachment) until well combined.  Add the powdered sugar and the vanilla extract and stir until completely incorporated and smooth.

-      Once the cakes have cooled, transfer one cake to a large plate.  Cover the top with icing, and then place the second layer on top.  With a long spatula, spread the icing over the top and sides of the cake.  Press pecans into the sides of the cake.

 minutes

-Mix sugar, flour, eggs, salt, and vanilla in separate large bowl

-Take chocolate mixture out of microwave and pour into large bowl with  

 sugar mixture.

-Mix well and pour into a microwavable cup

-Place cup in microwave and let cook for 3 minutes

 Garnish with whipped cream and serve
