Instructions

WHAT YOU NEED for Fish

1 tablespoon lime juice, fresh squeezed

4 6 ounce halibut fillets

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

1 cup tortilla chips, finely crushed

¼ teaspoon cayenne pepper

2 eggs, beaten

WHAT TO DO

1.    Preheat oven to 400 degrees. Lightly grease a baking dish.

2.    Drizzle both sides of fish with lime juice. Season fish thoroughly with salt, pepper and cayenne and set aside.

3.    Place tortilla chips on a plate and mix together. Dip each fillet in egg and then coat with tortilla chips.

4.    Place each fillet in baking dish and bake for 15-17 minutes, or until fish flakes and serve

Jalapeño Tartar Sauce

WHAT YOU NEED

½ cup mayonnaise

1 jalapeño, stemmed, seeded, and finely diced

2 garlic cloves, minced

1 teaspoon chopped fresh cilantro

1 teaspoon lime juice, freshly squeezed

Kosher salt

WHAT TO DO

1.    Mix together mayonnaise, jalapeño, garlic, cilantro and lime juice. Season to taste with salt. Serve with baked halibut and garlic-lime rice.

Garlic-Lime Rice

WHAT YOU NEED

1 cup long-grain white rice

Coarse salt

½ cup fresh cilantro

2 tablespoons fresh squeezed lime juice

1 tablespoon olive oil

2 garlic clove

WHAT TO DO

1.    In a medium saucepan, bring 1½ cups low sodium chicken stock to a boil.

2.    Add rice and nice pinch of salt; cover, and reduce to a simmer. Cook until stock is absorbed and rice is just tender, 15 to 18 minutes.

3.    In a blender, combine cilantro, lime juice, oil, garlic, and 2 tablespoons water; blend until smooth. Stir into cooked rice thoroughly.
