Fried Catfish Melt

1. In a medium bowl, mix together flour and cornmeal. Season fish with salt and pepper. Coat fish with cornmeal mixture and set aside.
2. Add oil to a large sauté pan over medium-high heat. When pan is hot, add fish to the pan. Cook on one side until golden brown, about 4 minutes. Carefully turn the fillets and cook for an additional 2 to 3 minutes more. Remove fish from pan with a slotted spatula and drain on paper towels. Top with cheese. 
3. Add butter to a large sauté pan over medium-high heat. Crack eggs into pan and cover with a lid for about 3 minutes. When eggs are set, remove from pan and set aside.  
  • 1 1/2 cups flour
  • 1/4 cup yellow cornmeal
  • Kosher Salt to taste
  • Fresh black pepper to taste
  • Canola oil, for frying
  • 4 Catfish fillets
  • 4 slices mild cheddar cheese
  • 1 ½ tablespoons of butter
  • 4 eggs
  • 4 Kaiser Rolls
  • 4 tablespoons tartar sauce, ready made
  • 4 iceberg lettuce leaves
  • 1/2 tomato, sliced
