Instructions

Crock Pot Pulled Jerk Pork & Mango Salsa

What You Need

3 lbs. boneless pork shoulder, lean, most fat removed

2 tablespoons fresh garlic, minced

3 tablespoons mild Jerk seasoning

½ teaspoon kosher salt

Juice from 1 lime

½ cup fresh orange juice


What To Do

1. Cut slits into pork.  In a large bowl, combine garlic, jerk seasoning, salt, lime and orange juice.

2. Cut slits into pork and place into bowl covered with plastic wrap. Refrigerate overnight.

3. Place pork and marinate drippings in a crockpot.  Cook on low for 9 hours or until fork tender. Serve with avocado-mango salsa and steamed rice.

Caribbean Avocado-Mango Salsa

What You Need

1 Haas avocado, ripe but firm, diced

2 large ripe mangos, peeled, seeded and diced

1 ½ tablespoon red onion, chopped

6 sprigs fresh cilantro, chopped

juice from 1 lime

Kosher salt to taste

Ground black pepper to taste

What To Do

Add all the ingredients to a medium bowl. Mix well and refrigerate. Serve with Jerk Pork.
