Recipe Of The Week, St. James Cheese Company's Gruyere Mac & Cheese Sandwich

This grilled cheese from the St. James Cheese Company is called the Croque Monster for its immense size and unbeleviable flavor! Try out the recipe at home.  


·      2 cups crème fraîche

·      1 egg yolk

·      1 pinch freshly grated nutmeg

·      Kosher salt and fresh ground pepper to taste

·      Shredded cheese, mix of alpine style cheeses (Gruyere, Comte, or Scharfe Maxx)

·      2 thick slices Pullman loaf bread

·      French ham


-      To make croque sauce, whisk yolk and crème fraiche together, add nutmeg, salt, and pepper to taste

-      Layer about 2 tablespoons of croquet sauce, ham, and shredded cheese between two slices of Pullman bread/Texas toast

-      Top with two tablespoons of sauce and a handful of shredded cheese

-      Finish off by melting top with a brûlée torch until cheese is browned
